Swabs from work surfaces in the food production area are one of the cornerstones of Manufacturing Quality Assurance (HACCP). Swabs are taken from all elements included in the production process, i.e. swabs from tables, countertops and other work surfaces, swabs from cutting boards, swabs from employees’ hands, swabs from production machines. Each of these elements should be covered by the HACCP system because each of them can be a source of spreading the infection.
